屢獲殊榮的天外天中菜廳一直致力挑選新鮮食材,烹調經典和研發創新菜式,為饕客送上多元化的粵式佳餚。餐廳將與知名威士忌酒廠Bowmore和Glenfarclas於2019年9月至10月期間攜手呈獻單一麥芽蘇格蘭威士忌品酒晚宴,帶領賓客展開與別不同的餐飲體驗。
天外天中菜廳行政總廚黃子其師傅和資深侍酒師俞錦榮以六道菜的品酒菜單,配上一系列精心挑選的頂級單一麥芽蘇格蘭威士忌,當中包括Bowmore 12年、Bowmore 15年、Bowmore 18年和Glenfarclas 12年,為賓客打造刺激感官之旅。
品酒晚宴率先以一杯迎賓香檳和第一道前菜揭開序幕,當中包括粵式明爐燒味如玫瑰煙鴨胸、蜜汁燒風鱔和冰燒三層肉,配以一杯Bowmore 12年單一麥芽威士忌。黃子其師傅特以玫瑰精華煙燻鴨胸肉,令肉質保持鮮嫩,同時芬芳四溢;黃師傅另以秘製醬料醃製白鱔,掛起風乾再放入烤爐內燒烤至甘香,最後掃上蜜糖調味。Bowmore 12年單一麥芽威士忌在波本桶及雪莉桶中陳年至少12年,散發著酒廠的標誌性風格,帶有淡淡的檸檬、蜂蜜味和Bowmore特有的煙燻香味,以及黑朱古力和泥煤煙燻味,餘韻變化微妙且悠長,特別適合配搭粵式明爐燒味等菜式。
晚宴的第二道菜為三色胡椒脆蝦球,配以一杯Bowmore 18年單一麥芽威士忌,進一步提升蝦球的鮮味和胡椒的辛香。此Bowmore陳年單一麥芽威士忌在優質波本桶和雪莉桶中緩緩熟成,令其泥煤味和橡木味相互融合,色澤呈赤褐色,帶有奶油、拖肥糖、水果和朱古力的香味,以及淡淡煙燻泥煤香氣,餘韻悠長而豐富多變。
其他精緻佳餚包括杭州東坡肉,配以一杯Bowmore 15年單一麥芽威士忌;以及鹹鮮鳳凰炒飯,
配以一杯Glenfarclas 12年單一麥芽威士忌。被譽為Bowmore系列最佳入門款的15年單一麥芽威士忌,以嚴選的美國波本桶與西班牙Oloroso雪利桶熟成,結合香甜與煙燻的完美特性,色澤呈黃褐色,帶有濃郁的黑朱古力和葡萄乾香氣,伴隨著經典的Bowmore煙燻、杉木和拖肥糖味,與柔和的泥煤香味融合,細緻平衡,餘韻悠長並帶有雪莉酒、 香料和麥芽香,完美中和東坡肉的油膩感。Glenfarclas 12年單一麥芽威士忌以百分百Oloroso雪利桶熟成,色澤呈亮麗的琥珀金色,氣味清新,融合了雪莉酒的果香與誘人、刺激的甜味,帶一絲活潑的橡木芬芳;口感飽滿,同時帶有讓人愉悅的橡木香與微微的辛辣感,特別適合配搭天外天以中式海味入饌的炒飯,提升菜式的鹹鮮味。

As one of the city’s most celebrated Cantonese restaurants, Above & Beyond constantly introduces exquisite Chinese cuisine to enhance guests’ dining experience with stunning views of Victoria Harbour as the backdrop. Whisky aficionados are invited to embark on a copper-hued journey at Above & Beyond throughout September and October 2019 to unveil the essence of liquid gold by renowned single malt Scotch whisky distilleries, Bowmore and Glenfarclas.
Executive Chinese Chef Chi Ki Wong and talented sommelier Wing Yu will engage guests’ every sense through an enticing six-course dinner menu and a handpicked selection of single malt Scotch whiskies, from the warm amber 12 years old to the remarkable 18 years old.
The dinner starts with a glass of welcome Champagne, Roasted Duck Breast with Rose Dressing, Grilled Eel with Honey Sauce and Crispy-roasted Pork Belly, complemented by a glass of Bowmore Islay Single Malt Whisky 12 Years Old. The tender duck breast is specially smoked with aromatic rose-infused water to add flavours while the honey-glazed eel fillets are carefully marinated, air-dried and grilled. Reflecting the essence of Bowmore – thrashing waves, windswept landscapes and generations of tradition – the Bowmore 12 years old is both complex and perfectly balanced. Its subtle lemon and sweet heather honey flavours with a delicious, long and mellow finish perfectly pairs with the Chinese barbecued meat platter specially crafted by Above & Beyond.
The dinner continues with the Wok-fried Crispy Prawns with Black, White and Green Peppers, paired with a glass of Bowmore Islay Single Malt Scotch Whisky 18 Years Old. Cosseted away in the finest, hand-selected oak casks and allowed to mature at its own sedate pace, the Bowmore 18 Years Old is one of the most remarkable, perfectly balanced single malt Scotch whiskies of its kind. Known for its creamy caramel toffee with ripe fruit and smoke aromas, it is incredibly complex, with beautiful soft fruit and chocolate balanced with a light smokiness that enhances the flavours of the peppery prawns.
Other menu highlights include the authentic Hangzhou-style Braised Pork Belly paired with a glass of Bowmore Islay Single Malt 15 Years Old and the Fried Rice with Salted Fish and Chicken paired with Glenfarclas Highland Single Malt Whisky 12 Years Old. Matured first in bourbon barrels then Oloroso casks, the Bowmore 15 Years Old has dark chocolate and raisin aromas with the classic Bowmore smokiness, alongside wonderful cedar wood and rich treacle toffee flavours which balances the greasiness of the braised pork belly. Matured in 100% Oloroso sherry casks, the vibrant amber gold, full-bodied Glenfarclas 12 Years Old has fresh and beautifully light, sherried fruit aromas with a tempting spicy sweetness and a hint of sappy oak which matches well with fried rice with dried seafood.
