港島太平洋酒店餐廳於2019年7月2日至10月31日期間,推出全新「大馬滋味台灣風」自助晚餐,雲集多款地道的馬來西亞佳餚,以及台灣街頭特色小吃,例如馬來西亞肉骨茶、即叫即製娘惹叻沙、台灣牛肉麵、燻肉酸菜割包、海南雞飯及時令新鮮水果車仔檔等,配以琳琅滿目的甜品,還有冰鎮海鮮及任食Häagen-Dazs雪糕,讓賓客大快朵頤,回味無窮!
濃郁惹味的南洋風情
大廚將肉排連豬骨加入滋補中藥如當歸、熟地、白朮、玉竹、黨參、杞子,配合八角、茴香、桂皮、丁香、大蒜、甘草等香料熬製3小時而成的馬來西亞肉骨茶,香濃美味。
新鮮熱辣的娘惹叻沙,以蝦頭、辣椒乾、馬拉盞、乾蔥蓉、蒜蓉、薑蓉及椰漿等熬製而成,濃郁的湯底散發着芬芳的椰香味,加上精選配料如鮮蝦、魚片、豆卜、芫茜及豆芽,吸附湯汁後,飽滿香滑,讓人回味無窮。
從娘惹菜演變的參峇醬(Sambal),以辣椒、蝦膏及其他香料調製而成,用來搭配不同食材添味,大廚取其特色製成參峇醬炒蘿蔔糕,將惹味的醬汁精華濃縮在內,香味四溢。
另一道馬來西亞炒粿條,將粿條混入參峇醬、甜豉油、辣椒、薑蓉、蒜蓉炒製,連同豆芽菜、韭菜和蛋等佐料一起大火翻炒,並加入魚片、海蝦來增添口感。
大廚洗乾淨泰國香米,加入自製新鮮斑蘭汁、椰奶、香茅以及南薑一起蒸煮,配上由乾蔥、蒜蓉、香茅、辣椒、魚乾以及蝦醬炒製而成的辣醬,製作成斑蘭椰漿飯,風味獨特!
享譽世界的馬來西亞海南雞飯,飯以雞油、香茅、南薑、斑蘭葉及檸檬葉煮成;大廚更利用不同的香料製作白滷水浸雞,使雞肉皮滑肉嫩;配上三色蘸料有薑茸、黑豉油及辣椒醬,大廚以馬來西亞辣醬加以獨門秘方調製,混合薑、蒜、乾蔥及辣椒令其更出色惹味。
樸質情真的寶島風味
大廚亦為一眾饗客獻上台灣地道美食,絕對不容錯過的當然是台灣牛肉麵。湯底選用牛骨及牛筋熬製24小時而成。牛肉筋度均勻,肉質柔嫩,厚實大片兼份量十足,配上煙韌麵條及惹味濃湯,使人再三回味!
另一道國民美食燻肉酸菜割包,蒸熱的饅頭夾着燻過的五花肉,油香四溢的豬肉配上清新開胃的青瓜和豐富的酸菜去除油膩感,成為其中一款最受客人歡迎的小食。
金黃酥脆的台式鹽酥雞總是讓人愛不釋手。大廚先將雞胸肉用乾蔥、蒜蓉、豉油、豆粉、糖及五香粉醃製,然後裹上地瓜粉,炸過後表面酥脆香口、肉質鮮嫩,加上九層塔和自製的胡椒鹽,香氣撲鼻,使人垂涎三尺!
其他台灣美食還有清涼解熱的白玉苦瓜燉唐排、香脆鮮味的台式蚵仔煎、台式滷肉飯等。而甜品則有幼滑濃郁的甜心紫薯慕絲蛋糕,大廚選用台灣甜心蕃薯,蒸煮後磨成蓉然後加入慕絲當中,伴上開心果碎,口感豐富。另有近期大熱的奶香芋圓仙草凍,以及清新甜蜜的台灣鳳梨乳酪蛋糕,餅底用忌廉芝士製成,而頂層鋪上炒製過的鳳梨。款款精心炮製,帶領賓客細味地道風味菜式,感受獨特的風土人情!

Tasty Nanyang-style cuisine
Bah Kuet Teh is a traditional Malaysian pork bone soup infused with pork ribs, several types of spices and oriental herbs. For 3 hours of preparation, enjoy the rich flavour of the broth with a slight touch of medicinal taste.
Spoil yourself with a bowl of Nyonya Laksa, a Malaysian noodle soup with mouth-watering spicy coconut broth. The coconut milk, shrimp head, dried chilies, belacan, minced shallot, garlic and ginger give the soup an intense flavour, richness and heat. You can choose from an array of toppings: shrimp, fish cake slices, tofu puff, cilantro and bean sprout.
Another highlight of this feast is the Stir-fried Turnip Cake with Sambal Shrimp Paste. Sambal sauce is a popular condiment in Malaysia, made with chilies, shrimp paste and different spices. The complexity and spiciness of the sauce combined with the sweet and crunchy turnip cake, you will not stop eating after taking one bite!
Char Kway Teow is a signature noodle dish from Malaysia, well known with its contrasting textures and aroma. The rice noodles are stir-fried with sambal sauce, sweet soy sauce, chilies, minced ginger and garlic, along with toppings such as bean sprout, chives, egg, fish cake slices and shrimp on high heat to produce a smoky flavour.
Nasi Lemak is a Malaysian fragrant rice dish, cooked with fresh pandan juice, coconut milk, lemongrass and galangal. It is served with a special chili sauce made with shallot, minced garlic, lemongrass, chilies, dried fish and shrimp paste, the savory aroma making it one of the most signature dishes in Malaysia.
Try out our Hainanese Chicken Rice, the rice is cooked with chicken fat, lemongrass, galangal, pandan and lemon leaf. Chicken is juicy and tender, served altogether with dark soy sauce, ginger, and the Malaysian chili sauce, making it more flavourful.
Delights of Taiwan
Dive into the feast with signature Taiwanese dishes such as the Taiwanese Beef Noodle. The broth is made out of beef bone and tendon, then being simmered for 24 hours for a rich flavour. Don’t be afraid to slurp and enjoy the delicious broth, tender beef and firm noodles.
Smoked Pork Belly and Preserved Vegetable Bun is a cut-open steamed bun stuffed with tender smoked pork belly, preserved vegetable and refreshing cucumber slices. The well balanced flavour and texture making it one of the most famous night market side snacks in Taiwan.
Another popular street snack would be the Popcorn Chicken. The chicken breast is marinated with shallot, minced garlic, soy sauce, cornstarch, sugar and five-spice powder, then coated with sweet potato starch before being deep fried. Served with fried Thai basil and pepper salt, the crispy and moist chicken bites are addictively delicious.
Other signature highlights include Double Boiled Pork Rib Soup with White Bitter Melon, Mini Oyster Omelette, Braised Minced Pork Rice in Taiwanese Style and more. Our dessert counter features a variety of sweets such as the Purple Sweet Potato Mousse Cake, our chef cooks the Taiwanese purple sweet potato till soft and mixes it into the mousse, along with pistachio nuts sprinkle on the side for a crunchy texture. Other than the mousse cake, the buffet also includes Iced Grass Jelly with taro balls and Taiwanese Pineapple Yoghurt Cake, made with cream cheese and sautéed pineapple slices.
