中菜行政主廚徐偉輝師傅以經典菜式為藍本,加入其喜愛的食材,特意構思四款精緻小食搭配香檳,包括蘑菇雞仔批、鮑粒脆蜂巢、奇妙桃蝦球及五味香燻魚,請參閱附件詳盡介紹。每款小食均以優雅的不銹鋼雪條棒呈盤,配以色澤通透的香檳,散發著細膩的香氣,品味其精緻的層次,為食客呈獻全面的感官體驗。
食客凡於天外天點選兩杯巴黎之花Grand Brut NV香檳,即獲享一碟四款小食;而享用一枝Grand Brut NV香檳或 Blason Rose香檳,即獲贈兩碟小食。供應日期為2018年7月1日至7月31日。

Diners are invited to toast with two glasses of iconic Perrier-Jouët Grand Brut champagne and savour a selection of specially designed Pop Bites by Above & Beyond’s acclaimed Chef Paul Tsui – a Cantonese culinary master known for his unparalleled knife work, beautiful plating, and flawless technique. The sparkling fun continues… guests who sip a bottle of Perrier-Jouët Grand Brut or Blason Rosé will receive two platters of Pop Bites.
Crafted to match the distinctive flavours and joie de vivre of Perrier-Jouët champagnes, Chef Paul’s Pop Bites are artfully presented on popsicle sticks – evoking childhood memories of the most refreshing tastes and exuberant moments of summer. From simple yet delectable Diced Chicken and Mushroom Pie to light, Crispy Taro Cake with Diced Abalone to succulent Deep-fried Prawn with Walnut Purée and Crispy Smoked Garoupa with Five Spice, each exquisite canapé is packed with premium ingredients and tantalising taste.
The ideal locale for the season’s most enchanting celebrations, Above & Beyond glistens at the tippy top of Hotel ICON with sumptuous Terence Conran interiors, innovative art by local talents and truly spectacular skyline views.
