以莓果入饌的健康有營應節佳餚
- 燒原隻聖誕火雞配香橙蔓越莓醬
廚藝團隊精心炮製重達10磅的美國火雞,以慢煮方式烤焗達4小時,烤至火雞表皮呈現香脆金黃。火雞肉搭配蔓越莓醬是地道的美式吃法,大廚將新鮮香橙、蔓越莓烹煮成果醬,天然美味又健康,作為火雞肉沾醬更添滋味。肉質細緻的火雞肉,加上酸酸甜甜的香橙蔓越莓醬,口感瞬間變得清爽,更襯托出火雞鮮嫩肉質。
- 波士頓龍蝦菠菜沙律配紅加倫子汁及水牛芝士
此菜式賣相極為吸睛,大廚選用重600克的原隻龍蝦,大塊飽滿的彈牙口感實在過癮。竅妙在於先用冰水浸原隻龍蝦肉,令肉質更為爽口。較為少見的紅加侖子,味道非常酸,故製成果汁拌入沙律,與柔軟香滑的水牛芝士配合得宜,入口更帶有清新果香。
- 藍苺黑醋蜜餞三文魚
大廚先將三文魚煎至兩面金黃色備用,再把煮成果醬的藍莓及紅酒煮滾,加入牛油及意大利黑醋拌勻,煮至濃稠,然後將藍莓黑醋醬淋上三文魚,吃起來果香濃郁,口感豐富。
- 燒美國豬肋骨配紅桑子醬
大廚選取上等的美國豬肋骨,燒至表面微微金黃,在肋骨表面塗上一層自家特製的紅桑子醬,然後再烤20分鐘,讓醬汁緊緊鎖在肉質上,吃時甜而不膩,滋味無窮。
- 紅加倫子青檸黃梅蝦球
中西合璧的創意口味,大廚以果皮光澤透明、鮮嫩欲滴的紅加倫子,加入青檸及黃梅,製成口感清新的醬汁,配上爽口的大蝦,味道酸酸甜甜,非常開胃獨特。
美輪美奐的彩苺甜品
「奇幻彩苺園」自助晚餐甜品款式琳瑯滿目,供應超過10 多款以莓果入饌、令人垂涎欲滴的精緻甜品,為豐盛的晚餐完美作結。當中以雜苺彩虹蛋糕及紅桑子流心梳乎厘成為是次自助餐的亮點!前者集7款苺果而成,蛋糕以彩虹顏色一層一層呈現,甜入心扉且鬆軟非常。後者即叫即製,蛋香濃郁,口感綿密軟滑,內裡滿載流心紅桑子果醬的誘惑,為晚餐畫上一個圓滿的句號。

港島太平洋酒店精心佈置,營造歡樂的聖誕氣氛,無論酒店大堂、餐廳以及前往餐廳的樓梯,均設有「奇幻彩苺園」為題的影相打卡位。首先由扶手電梯進入酒店大堂,客人即被色彩斑爛的壁畫所吸引,彷彿走進結滿花蕾、果實的神秘花園。此外,影相區亦放置了蓄着白鬍、笑意盈盈的聖誕老人、馴鹿、雪橇等紙板公仔,打造立體效果,可供一家大小拍照留念。沿樓梯拾級而上 餐廳,客人彷如置身奇幻無比的彩苺園,充滿甜蜜、愉悅的果香氣息瀰漫在空氣中。餐廳將繼續與「可口可樂」合作,將經典復古的「可口可樂」珍藏品延長擺設期,並加入極具標誌性的紅衣聖誕老人的限量海報,邀請客人一起踏上聖誕奇幻旅程。

Throughout December and until 31 January 2018, Centre Street Kitchen is celebrating the holiday season with a healthy and tantalising festive buffet offering. Indulge in sumptuous berry-themed buffets and irresistible desserts while enjoying the magnificent views of Victoria Harbour. In collaboration with the well-loved brand “Coca-Cola”, its vintage collectibles and “Coca-Cola Santa Claus” posters will be displayed throughout our restaurant. To further enrich the festive ambience, the hotel lobby will be transformed into a Christmas Berry Garden where guests are invited to snap their celebration photos with family and friends in front of the Instagram-friendly backdrop.

Many berries are a feast for the eyes, some are alluringly delicious, others have medicinal properties and yet others produce fabulous flavourings. Excite the senses with a sumptuous berry-themed menu specially crafted by our culinary team.
- Slow Cooked Turkey Roast with Orange-Cranberry Sauce
Celebrate with a traditional American-style Christmas turkey glazed with a delicious cranberry and orange sauce. Featuring a 10-pound US turkey prepared in an intricate process of repeated marinating and baking, this mouth-watering main dish is served tender inside and crispy golden outside. The orange-cranberry sauce is a delightful combination of sweet, tart and tangy flavours that go together perfectly with the turkey.
- Boston Lobster Carpaccio with Baby Spinach Salad, Red Currant and Mozzarella Cheese
Thoughtful presentation leads to a more enjoyable meal. Possibly the most beautifully presented dish – the Lobster Carpaccio combines rich flavour and texture to awaken appetite. From the smoothness of the olive oil to the tender cut of Boston lobster, to the slightly salty flavour of Mozzarella Cheese to the bright splash of red currant, this dish is a simple yet elegant way to begin a meal.
- Blueberry Balsamic Glazed Salmon
Blueberries are cooked down with balsamic vinegar, sugar, thyme, and lemon to make a potent glaze for brushing onto the salmon. The salmon is placed under a broiler to cook, and turn the blueberry glaze into a sticky, flavourful coating. The sweetness of blueberries, the acidity of the vinegar, and the fragrance of the rosemary makes for a very rich sauce that is the essence of this dish.
- Sticky Barbecued U.S. Spare Ribs with Raspberry Sauce
The U.S. spare ribs are seasoned, boiled until tender, and then simmered in a sweet and savory barbecue sauce made from fresh raspberries. Sweet and tangy, raspberries bring this sauce to a whole new level, which is the perfect addition to the falling-off-the-bone tender ribs. Then they are finished off in the oven to create the best, barbecue sticky glaze.
- Wok Fried Shrimps with Red Current, Lime and Apricot
This is a nutritious twist on a classic Chinese dish providing a fascinating fusion of East and West. The delicious Chinese stir-fried dish is absolutely delicious on its own but it ignites senses when topped with succulent red currants, lime and apricot. It is a dish full of great flavour and texture.
