炎炎夏日,正是瓜果的當造季節。富豪九龍酒店首席中菜行政總廚曾仲康師傅特意挑選時令及清甜的瓜果,於富豪軒呈獻多款主題菜式,讓您的味蕾體驗清新滋味。
瓜類算是容易配搭的食材,無論配以任何材料,均可造出千變萬化的佳餚。首先介紹山珍伴水晶冬瓜片,清甜鮮味的冬瓜片配以銀杏、羊肚菌、番茄及莧菜,是一道既消暑又滋味的健康素菜。還有花膠瑤柱扒節瓜脯,大廚先將厚片節瓜以慢火燜煮至腍身入味,再釀入花膠及瑤柱燴煮片刻,海味之鮮甜味滲入瓜肉中,令人回味無窮。
水果則是一種清新而營養豐富的食材,加上海鮮及肉類,便可製作出多款健康的消暑好選擇。誠意推介蜜運喜帶子,鮮甜肉厚、爽滑彈牙的加拿大帶子配上營養價值豐富及多汁的哈蜜瓜粒,簡單又美味。另一推介是黑蒜石榴炒和牛粒,黑蒜及石榴分別具排毒及降血糖功效,加上石榴清甜爽口,既可中和牛肉的肥膩感,卻又保留濃郁的牛脂香,屬牛迷必選菜式。此外,蘋果香醋玉桂脆斑球亦不容錯過,香脆的石斑球淋上以多纖的蘋果與香醋及玉桂製成的醬汁,惹味非常,每一口都滲出淡淡的果香。至於鳳梨紫薑炆雞,選用自家醃製的紫薑與新鮮菠蘿,更可突顯雞肉的鮮味,最後加入百花蜜,別具特色。

Summer is the season of melons and fruits. Our Chief Executive Chinese Chef Tsang Chung Hong meticulously concocts a variety of culinary creations emphasizing different kinds of seasonal melons and fruits at Regal Court to refresh your taste buds.
The succulent and sweet melons are popular picks as they can pair well with most ingredients to present scrumptious dishes. Highlight includes Braised Winter Melon with Mushrooms. The luscious sliced winter melon cooked with morels, ginkgo, tomatoes and amaranth, offers you a light and healthy vegetarian treat. For Braised Stuffed Conpoy and Fish Maw in Marrow, the thick sliced marrows are firstly braised to soften the texture and then stewed with conpoy and fish maw. The marrow’s flavour is further enriched with dry seafood essence.
Fruits are nutritious. Cooking them with seafood or meat can make an array of healthy and refreshing delights. Sautéed Scallops with Honeydew Melon is a simple yet delicious selection. Honeydew melon has rich nutrients and its aromatic flavour is a perfect match with the bouncy scallops. For beef lovers, don’t forget to sample the Wok-fried Wagyu Beef with Pomegranate and Black Garlic. Both pomegranate and black garlic are effective in reducing blood sugar and eliminating toxins inside the body respectively. Also, the sweet and juicy pomegranate can balance the greasy taste and double up the meat flavour. Sautéed Grouper Fillet with Cinnamon and Apple Vinegar Sauce is a not-to-be-missed dish. The deep-fried crispy grouper fillet is adorned with the Cinnamon and Apple Vinegar Sauce. Selecting homemade ginger, fresh pineapple and honey to prepare Braised Chicken with Pineapple and Ginger, Chef is determined to offer you an extraordinary choice in summer.
