Mirage 的廚師團隊一直致力為食客帶來與眾不同的餐飲體驗。Mirage 總廚 Owen Panzica 精心挑選品質上乘的加拿大及美國牛肉的不同部位,配以特式風格烹調,吸引好肉者的味蕾。 適逢 7 月 4 日是美國獨立日,美國人一向喜歡以燒烤派對慶祝。菜單上加入多款燒烤美食,當 中包括令人垂涎的開胃小吃及可與朋友一起共享的誘人主菜,讓客人一起投入及分享節日的喜 悅。
滋味主菜帶骨肉眼扒配香煎薯角(港幣$ 548),嚴選 40 日乾式熟成的 AAA 加拿大草飼牛,外 層烤至焦香可口並緊緊鎖住肉汁。這塊重 450 克的肉眼扒經過 40 天的乾式熟成後肉質變得鮮 嫩腍滑,油脂豐富而且肉汁濃郁亦不易流失。原條牛肋骨配嫩薯、乾蔥、四川花椒醬(港幣 $388)做法亦十分考究,首先將牛肋骨煙燻後再慢煮 8 小時至口感軟腍鬆化,加上四川花椒醬 的趣意配搭,令牛肋骨的味道更豐富,散發誘人刺激的香氣。
菜單上亦有提供以北美牛肉入饌的清新輕食。吃一口風味墨西哥夾餅配 USDA 側腹橫肌牛扒 (港幣$ 58/件),油花密布、烤得外脆內嫩的側腹橫肌牛扒配上玉米餅及墨西哥青醬份外醒胃惹 味,令您吃完想再多吃一件。USDA 牛肉沙律(港幣$ 128)將西冷牛肉表面輕輕烤一烤(約一成 熟 – rare),伴入菠菜、蕃茄、紅洋蔥及莞茜,並配以辣椒、青檸、蒜頭混製而成的開胃醬汁, 令人食慾為之一振。
牛肉愛好者亦可品味香口牛胸腩肉漢堡配酸瓜及辣根(港幣$ 128),還有惹味可口的煙牛肉腸配 薯蓉及芥末醬(港幣$ 138)。
為了讓客人感受紅酒與優質牛肉的經典配搭,Mirage 亦細心挑選了一系列的美國紅酒佳釀。 Cabernet Sauvignon, Freemark Abbey, Napa Valley, 2011 酒體飽滿,單寧圓潤幼滑,濃 郁的口感與油脂豐滿的肉眼扒非常匹配。餐廳亦推介 Petite Syrah, Stags Leap Winery, Napa Valley, 2013 及 Zinfandel, Kendall Jackson Vintner’s Reserve, Mendocino County, 2014,讓您可配搭自己專屬的口味。美國紅酒價錢為每杯港幣$ 130 – $160,每瓶港 幣$580- $980。

Americans always celebrate the remarkable 4th July Independence Day with blazing grills and gourmands can also celebrate by enjoying various grilled delicacies from mouthwatering starters to seductive sharing plates.
Savour the luscious 40 Day Dry Aged, Grass-Fed, Bone-in CAD AAA Ribeye with Fried Potatoes (HK$548) which is perfectly grilled with a crispy brown outside and juicy, flavoursome meat inside. Using high quality AAA-grade Canadian beef, the 450g ribeye offers generous marbling satisfying foodies’ craving for richness and tenderness. The beef aging process also enriches the flavours and enhances the juiciness. Whole Beef Short Rib with New Potatoes, Shallots and Sichuan Peppercorn Jus (HK$388) is firstly smoked and then braised for 8 hours to bring a melt-in-your- mouth texture. The intriguing combination with peppercorn sauce surely presents an unusual flavour.
Looking for a fresh and meaty indulgence? Be spoilt with the Mexican style USDA Skirt Steak Tacos in Corn Tortillas with Salsa Verde (HK$58 each). The zesty salsa verde freshens up the juicy grilled skirt steak stimulating your appetite for more. Enjoy the refreshing USDA Rare Beef Salad (HK$128) with baby spinach, tomatoes, red unions, coriander.
