爆漿、流心、拉絲……芝士美味豈止於此?今個一月,召集各位芝士控重新學習品味芝士,品嚐由AVA Restaurant Slash Bar全新法籍餐廳總廚Jeans-Charles Devillard精心設計的心動芝戀五道菜晚餐,菜譜由前菜、餐湯到主菜均以芝士入饌,一次過品嚐法國考姆特牛奶芝士、瑞士格魯耶爾芝士、法國羊奶芝士及藍芝士,豐富芝味絕對窩心難忘。餐廳更坐擁270度維港無邊美景,入夜後兩岸燈飾璀璨迷人。菜譜於2017年1月1日至30日(不適用於1月29日)期間,逢星期一至六 晚上6:30至10:30供應,每位HK$588。
羊奶芝士粒配自家製薯仔粉團
大廚親手將薯蓉加入麵粉及蛋黃,捲成口感煙韌綿密的小粉團,煮熟後灑上法國羊奶芝士粒,造成半溶化效果,配搭意大利青瓜及番茄乾,清新又飽肚。
藍芝士裹慢烤羊臀肉
以意大利古岡左拉藍芝士,混合香草、麵包糠及牛油,鋪在羊肉表面,先慢烤再輕煎,香氣撲鼻誘人。切下呈現金黃而帶有青黴花紋的藍芝士外殼,羊臀肉肉質粉嫩鬆軟,沾上薑餅汁帶有一絲甜美辣勁。

Creating the cheese dishes of your dream, new Chef Jeans-Charles Devillard presents to you In Love With Cheese, a 5-course set dinner featuring Comté cheese, Gruyère cheese, goat cheese and blue cheese. These taste buds-tingling cheese delights with indulgent recipes are guaranteed to please every palate and bring a whole new cheese tasting experience.
Perched on the 38/F of Hotel Panorama by Rhombus, AVA Restaurant Slash Bar owns 270-degree stunning views of the brightly decorated Victoria Harbour. In Love With Cheese will be available from 1 to 30 January 2017 (Exclude 29 January), Monday to Saturday 6:30pm-10:30pm at HK$588 per person.
Homemade Potato Gnocchi with Goat Cheese Crumbles
Mashed potatoes are mixed with flour and egg yolk to form plump and pillowy pieces of dough for boiling. Goat cheese crumbles are then sprinkled over the gnocchi to enrich its mild and delicate flavour and create a melty texture. Complementing zucchini and sun-dried tomatoes, a refreshing and hearty dish is born.
Slow-cooked Lamb Rump with Blue Cheese Crust
Smothered in a mix of Italian blue cheese, vanilla, butter and breadcrumbs, the lamb rump is slowly grilled and pan seared to transform into beautifully tender meat. Topped with caramelised endives and ginger bread jus, diners will definitely be tantalised by its delicious aroma and rich texture.
