頭盤「免治豬肉火雞肉丸」($128),免治豬肉、火雞肉與菲達芝士、麵包糠、辣椒片和多款香料混合等,搓成肉丸後煎香,頂層再淋上芝士醬,口感香嫩彈牙,配以酸種多士和紅莓醬品嘗,倍添開胃。天氣轉涼,最適合品嘗熱湯暖暖胃。創自 1893年的 Bookbinder’s soup,於美國多間餐廳甚為流行,早期會以大鱷龜作配料,後期則改以紅鯛魚。今次菜單可品嘗到這款著名的「紅鯛魚湯」($98),將洋蔥、甘筍和芹菜等炒香,再加入番茄湯、月桂葉、芫荽和百里香等帶出香味,最後加上煎紅鯛魚,味道鮮甜濃郁,風味十足。
主菜「煙燻雞肉鮮蝦雜錦飯」($218),雜錦飯(Jambalaya)為新奧爾良地道菜式,源自西班牙海鮮飯,選以煙燻雞肉、蝦、豬肉腸和秋葵,與百里香、洋蔥、辣椒片、紅椒粉和cajun 粉等一同炒香,後加入番茄湯、雞湯、番紅花米飯、車厘茄和粟米等烹調,吃時滲出香料辣勁,濃郁惹味,米飯則吸收了湯汁精華,夾雜番茄酸香,啖啖滿載滋味。另一道「BBQ Pork Sloppy Joe」($198),改良自美國經典漢堡包「Sloppy Joe」,將芝士通心粉壓成漢堡扒形狀,再裹上麵包糠炸至金黃,外脆內軟,濃濃的芝士香,加上煙肉、手撕燒烤豬肉、牛油生菜和燒烤醬等餡料,份外滿足。吃至尾聲,有香甜的「蜜桃餡餅」($58)作結,外脆內軟的餡餅內包以蜜桃果肉,味道芳香,伴以雲呢嗱雪糕,一冷一熱,口感非常豐富。
除美食以外,餐廳亦為客人帶來數款啤酒、葡萄酒及雞尾酒,如「Firecracker」($78),以伏特加和 blue curacao藍柑橘酒作基調,加入檸檬汁和石榴糖漿調成,酸甜清新,非常容易入口,加上紅藍漸變色襯托,份外艷麗搶眼。另有兩款美國加州佳釀,包括白酒 Cloud Break Sauvignon Blanc($358/瓶),帶蜜瓜、桃和梨三種清新果香,香氣誘人,充滿熱帶水果風味;紅酒Cloud Break Merlot($358/瓶),酒體順滑柔和,帶成熟布冧、黑莓和櫻桃香氣,口感甜美飽滿。
For the next stop on our Pork By Region Tour, we head straight into the heart of this holiday season’s festivities with some of America’s classic favourites and Thanksgiving-themed creations.
To get your taste buds tingling and appetite ready, we begin with a cheese lover’s delight – enter our Minced Pork & Turkey Meatballs ($128) served with a velvety cheese fondue, toast and cranberry sauce. Next up is our Chopped Salad ($118) with tomato wedges, sliced cucumber, grilled BBQ corn, savoury bacon, smoked chicken and cheese in a tortilla chip basket, topped with a creamy Caesar dressing. For a taste of the ocean and to warm up your stomach, try our Bookbinders Red Snapper soup ($98) dipped with toasted sourdough bread.
We kick off our mains with something for those who don’t mind getting a little messy: our BBQ Pork Sloppy Joe ($198), a deep-fried bacon mac & cheeseburger, bursting with flavour and enjoyed with a piquant cabbage slaw. We head south next with the Jambalaya ($218), a classic Louisiana dish of seafood rice, pork sausage, scallions, okra and smoked chicken. Nothing says classic American better than a Chicken Fried Steak ($218), featuring a deep-fried breaded rib-eye steak accompanied by mashed potatoes, beans, corn and luscious white gravy.
Make some space for our delectable desserts and indulge in our fragrant Peach Cobbler ($58) with a scoop of vanilla ice cream, or reminisce over your childhood memories with our sticky Banoffee Pie ($58), showcasing banana and salted caramel on a digestive biscuit base, drizzled with coffee cream.
Pair any of our dishes with our Firecracker ($78), blending vodka and blue curacao with lemon juice and grenadine, a cocktail ideal for the holiday season, or down an icy-cold Anchor Steam Craft Beer ($78) from San Francisco. Wine lovers can celebrate with the Cloud Break Sauvignon Blanc ($358) with its lively flavours of honeydew melon, juicy peach and ripe pear, or the silky-smooth Red Cloud Break Merlot ($358), with its well-balanced notes of plum, blackberry and cherry.
