地中海飲食文化亦主張色彩鮮豔的蔬食,感覺健康輕盈。大廚於前菜區加入了多款地中海主題沙律,包括尼哥斯沙律配番茄醋、香辣蟹肉配脆玉米餅及鮮蝦希臘沙律等,賓客更可自由加入油浸三文魚、橄欖油沙甸魚、青橄欖、車厘番茄及雅枝竹等各式配菜作配搭。主菜方面,魚類是地中海沿岸地區不可缺少的食材,大廚誠意推介焗原條三文魚及香草麵包糠焗鱸魚,煮法講究,以保持魚的鮮味。其他豐富海鮮主打包括地中海海鮮意粉、白酒蒜子藍青口及地中海蜆殼粉配黑橄欖、吞拿魚及水牛芝士。

Indulge in the fresh ocean flavours ‘au naturel’ and in dishes inspired by the different cuisines of countries bordering the Mediterranean Sea, including Spain, France, Italy and Greece.
The Mediterranean diet places an emphasis on fresh and colourful eating. Nicoise Salad with Tomato Vinaigrette, Spicy Crabmeat Tostadas and Tossed Greek Salad with Shrimp are among the vibrant delights served at the appetiser section. Guests can pick their favourite condiments from a wide selection including sardines in oil, green olives, cherry tomatoes and artichokes. Of course fresh fish is a major part of the Mediterranean diet. Highlights include the chef-recommended Baked Whole Salmon Parcel and Sea Bass Fillet Crumble, along with Mediterranean Mix Seafood Pasta, Blue Mussels in White Wine Sauce with Garlic and Mediterranean Conchiglie with Black Olives, Tuna and Mozzarella.
