春曦時分,置身櫻花盛開的清雅嫩紅中細頰一口清甜清酒。天外天中菜廳將於初春四月三至三十日呈獻日本清酒搭配晚宴,於維港映襯下展現饒富賞櫻風情。
天外天行政總廚徐偉輝師傅以精緻的五道中菜配對日本清酒,將食材和清酒原味細膩地呈獻給各位饕客。日本清酒味道淡麗微酸,青蘋果濁り雞尾酒正好為晚宴揭開序幕。徐師傅以天外天三小碟作第一道菜 - 以青瓜紅蜇頭、原隻鮑魚雞粒撻和五香安格斯脆腩片配以獺祭純米大吟釀活性發泡清酒,彰顯海鮮和香料的獨有香氣。接著港式片皮鴨,烤鴨皮脆、油香肉嫩,配襯酒味穩重的大黑正宗純米原酒兵庫県山田錦,餘韻悠長。徐師傅更炮製了大千脆炸蝦球,以不花巧的乾椒蔥蒜帶出大蝦和真澄宮坂純米吟醸宮坂美山錦實而不華的真正鮮味。
於醉人閃鑠的維港光芒下,品嚐由糕餅總廚何維城師傅製作的芒果熱情果泡芙配白朱古力忌廉,熱帶水果的酸甜配上国士無双梅 酒,微妙的甘美味道為晚宴劃上完美的句號。

Available from 3 to 30 April, the evening begins with a sake based Green Apple Nigori cocktail, which combines sparkling sake and plum sake with crisp green apple for a truly refreshing libation, best enjoyed while taking in Above & Beyond’s jaw-dropping skyline views. Created by acclaimed Chef Paul Tsui and expertly paired with Japan’s finest sakes, the mouthwatering meal starts with Marinated Cucumber and Jelly Fish with Minced Garlic, Baked Whole Abalone Tart with Diced Chicken, and Crispy Five Spice Sliced Angus Beef Brisket paired with a Dassai 50 Sparkling Junmai Daiginjo.
Next a divine Hong Kong Style Peking Duck is paired with Daikoku Masamune Junmai Genshu Hyogo Yamada Nishiki and Wok-fried Crispy Prawns with Dried Chilli and Shallots and Fried Rice with Diced Scallops, Crab Meat and Sakura Shrimps are accompanied by Masumi Cellar Miyasaka Junmai Ginjo Miyama Nishiki. A divine dessert of Mango and Passion Fruit Choux served with 33% White Chocolate Cream paired with Kokushimuso Umeshu plum sake completes the gourmand’s dream evening.
